These undocumented Gmail smileys/emoticons only work in the new version of Gmail and can be disabled in the chat section from the settings (note the cool permalink).
You can make: a diabolic creature }:-), a crab V.v.V, a wince>.<, a broken heart </3, a kiss :-x and a mustache :{.
Some other smileys still: :(:) is a pig, :(|) is a monkey, and :* is equivalent to :-x, (thanks BunnyHelper713)
We now have a bell, thanks to a tip from "someone." Just enter: +/'\
Also, just noticed that the \m/ shows a radio icon on one of the emoticon themes.
And don't forget all smileys/emoticons change according to what "theme" you choose on Gmail's Chat - even these "secret" ones.
Secret ones keep popping up, just received a tip for a robot (android?) one. Just type [:|] and you'll get this:
... and last but not least: the elusive poop icon in Gmail chat has been discovered! (thanks to a tip from an anonymous reader.)
You can "poop" on you Gmail chats by entering: ~@~
Also, in case you didn't know yet :
- surrounding a text with * turns it *bold* (as reminded by Cameron)
- surrounding a text with _ turns it into _italics_ (Thanks to Raoul)
- surrounding a text with - turns it into
strikethrough
P.S. Gmail has officially introduced smileys in Gmail (and added few more to their gmail chat.).

Also if you surrond what you type by astros (*) the text will bold.But this only works with 2 astros with text betwenn them.I also saw the :* one too when i was chatting.Thanks for the ref.!
Yes, I found that *bold* function in the beginning as well... quite handy and easy to use.
You also get Italics by surrounding your text with "_"s (_text_).

Well yes I actually found that out when I tried to find how to do an underline. So I thought an "underline", "_", would do the trick but apperantly it didn't so I'll just keep trying...

In Gmail chat you can't underline. Just bold and italicize stuff.
One possible workaround would be to trick it into being an url, like:
undelined.com
But that will probably look a bit odd.
Guess they left underlines out so that people wouldn't mistake it for real links.
why do you want to underline? like underlining a title? italics is the same thing: http://grammar.ccc.commnet.edu/grammar/italics.htm
I don't know about you, but for me there is a difference on how I read the tone of a text (between undeline, italics, and bold). It might be his reason too.

The pile of poop belongs to Gmail's email emoticons, and not the chat section.
You can access it by clicking the emoticon icon when composing an email on Gmail.

I made hearts that take up the whole chat window, solid and hallow, my wife loves them... Beats me... I think it's only available in the mail section.
Sending an email with it and inspecting the original text shows no meaningful "shortcut" equivalent - it goes as embedded images, with goomoji="???" being the emoticon code.
Don't know if there is a shortcut equivalent for those...

You just click on the "smiley" icon, and choose the appropriate icon from the expanded icon selector box.
This is valid just for the *email* section!
In the chat, you can only choose from a subset of all those icons.

You can try CTRL+mouse wheel up/down to zoom in/out on the page... other than that, I don't think you can (maybe it's possible with some greasemonkey script or something)
